- 1 cup milk
- 1 cup shredded coconut
- 3/4 cup butter
- 2 cups sugar
- 2 eggs
- 2 tsp baking powder
- 1/2 tsp salt
- 3 cups all purpose flour
- 1 tsp vanilla extract
- Mix coconut and milk, let stand 2 minutes
- Cream butter and sugar, add eggs and vanilla.
- Blend flour, baking powder and salt.
- Mix with coconut mixture.
- Pour into greased loaf pans.
- Bake at 350°F oven until golden, approximately 60 minutes
