Coconut Bread


  • 1 cup milk
  •  1 cup shredded coconut
  • 3/4 cup butter
  • 2 cups sugar
  •  2 eggs
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 cups all purpose flour
  • 1 tsp vanilla extract
  1. Mix coconut and milk, let stand 2 minutes
  2. Cream butter and sugar, add eggs and vanilla.
  3. Blend flour, baking powder and salt.
  4. Mix with coconut mixture.
  5. Pour into greased loaf pans.
  6. Bake at 350°F oven until golden, approximately 60 minutes
