Miso and Sweet Vinegar Dressing
Makes about 1 cup
- 2 Tbsp Sake
- 3/4 Cup plus 2 Tbsp. White Miso Paste
- 1/4 Cup plus 3 Tbsp Rice Vinegar
- 2 Tbsp Sugar
- Put the sake in a small saucepan and bring to a boil over medium heat to burn off the alcohol.
- Boil rapidly for 1-2 minutes then reduce to low.
- Add the remaining ingredients and still well with a wooden spoon until the sugar has dissolved and the mixture is the consistency of thick cream.
- Remove from heat and cool to room temperature before transferring to a jar.
- Store in the refrigerator and use within a month.
