Seared Beef with Mushrooms and Garlic

  • 1/4 cup dried porcini mushrooms
  • 1/4 cup olive oil
  • 6 steaks (about 2 1/2lbs)
  • 1 onion, chopped
  • 2 cloves of garlic, crushed
  • 1 pkg shiitake or button mushrooms, sliced
  • 1/4 cup red wine
  • 1 1/4 cup beef stock
  • 2 tbsp parsley
  • salt and pepper to taste
  • parsley, chopped for garnish(extra)
  1. Soak porcini mushrooms in boiling water for 20 minutes. Drain and chop. Set aside.
  2. Heat oil in shallow pan and cook beef for a few minutes on each side. Remove from pan.
  3. Saute the onion and garlic, in the same pan. Until translucent.
  4. Add mushrooms, and cook over high until softened.
  5. Add the wine and stock, bring to a boil.
  6. Simmer for 10 minutes. 
  7. Remove from heat and add parsley, season with salt and pepper.
  8. Serve the steak with the mushrooms and garnish with parsley.
