Seared Beef with Mushrooms and Garlic
- 1/4 cup dried porcini mushrooms
- 1/4 cup olive oil
- 6 steaks (about 2 1/2lbs)
- 1 onion, chopped
- 2 cloves of garlic, crushed
- 1 pkg shiitake or button mushrooms, sliced
- 1/4 cup red wine
- 1 1/4 cup beef stock
- 2 tbsp parsley
- salt and pepper to taste
- parsley, chopped for garnish(extra)
- Soak porcini mushrooms in boiling water for 20 minutes. Drain and chop. Set aside.
- Heat oil in shallow pan and cook beef for a few minutes on each side. Remove from pan.
- Saute the onion and garlic, in the same pan. Until translucent.
- Add mushrooms, and cook over high until softened.
- Add the wine and stock, bring to a boil.
- Simmer for 10 minutes.
- Remove from heat and add parsley, season with salt and pepper.
- Serve the steak with the mushrooms and garnish with parsley.
